Justin and I recently hiked Silver Peak via the Pacific Crest trail in the Mount Baker Snoqualmie Wilderness area. It's close to Seattle, scenic, on varied terrain, and at 6 miles round-trip, a convenient day hike. Many trail guides and reviews describe the hike to the top of the peak as a "scramble" but that's really quite a bit of an exaggeration.

There's a trail to the top and very little (if any) 3-point climbing required (i.e. use of one hand to steady). It took us 4 hours rather than the suggested 6, and that was with the hour we spent on top of Silver Peak eating lunch and reading Harry Potter. It's not really a challenging hike-- we certainly took our time-- but it will give you a bit of a workout. I'd recommend it for the convenient location and for the views-- even if you can see the freeway from the top. :)
